Roast Salmon topped with Crusted Pecorino Pesto
2 Salmon fillets, (150g) skinned
1 Heaped tablespoon finely grated Pecorino cheese
2 Tablespoons of fresh pesto sauce
Juice of half a lemon
2 Tablespoons of fresh bread crumbs
Salt and fresh cracked pepper
Method
Preheat oven to 230c Place fillets in a baking tray and season with lemon juice, salt and crack pepper Stir pesto and measure 2 tablespoons into a small bowl Mix 1/3 of breadcrumbs into pesto to form a paste and spread this over both salmon fillets Mix half the pecorino with the remaining breadcrumbs and scatter over the pesto. Then add the rest of the pecorino over the top Place baking tray in the middle of the oven and cook for 10 minutes, by which time the top should be golden brown and crispy and the salmon just cooked and moist. Serve with steamed new potatoes. Serves 2
